Organic Chicken Honey Mustard w/Rice

Preparation time: 10 min.
Cooking time: 20 min.

Ingredients
1/4 cup cornstarch
4 cups chicken stock
2 Tbs. honey
2 Tbs. Dijon or stone ground mustard
8 boneless skinless chicken breast halves, about 1/4 lb. each
2 cups carrot\grated, cut into 2 inch matchstick-thin strips
1 cup onion\cooked, sliced
2-2/3 cups water
2-2/3 cups instant rice



Cooking Directions
Combine first 4 ingredients in a bowl and mix until smooth. Set
aside. Cook chicken in a heavy nonstick skillet over medium
high heat 10 minutes or until browned. Set chicken aside. Stir
cornstarch mixture and add to same skillet. Add carrots and
onions. Bring to a boil and cook until thickened, stirring constantly.
Return chicken to pan. Reduce heat to low.
Cover and cook 5 minutes or until chicken is no longer
pink. Meanwhile, bring water to a boil in a saucepan over high
heat. Stir in rice, cover pan and remove from heat. Let stand 5
minutes. Fluff with a fork before serving with chicken.
